Moroccan Carrot-Apple Salad

1 cup grated apple

1 cup grated carrot

8 green olives, pitted and coarsely chopped

1/2 cup chopped fresh cilantro

1 clove garlic, finely chopped

1 tablespoon extra-virgin olive oil

2 1/2 teaspoons lemon juice

1/2 teaspoon ground cumin

Toss ingredients in a bowl. Season with salt and pepper, and serve.  From Self, Sept. 2010.
