1/2 cup finely chopped onions
1/2 cup chopped smoked turkey breast
1 clove garlic, minced
1/2 tablespoon white wine vinegar
Hot pepper sauce
Tear the leaves of the greens away from the stems and discard the stems. Tear the greens into bite-size pieces. Coat a large nonstick skillet with cooking spray. Scatter the onions, turkey, and garlic evenly in the skillet, and warm over medium heat. As soon as the skillet starts to heat up, add as much of the greens as the skillet will hold. (If necessary, add the remainder after the first batch cooks down enough to make room for them.) Cover tightly and cook until the greens wilt and soften, 7 to 8 minutes. Stir to combine. Sprinkle with the vinegar and add hot pepper sauce to taste.
